About a year ago, during a cross-country road trip somewhere on the plains of eastern Colorado, Tim Wallace, a senior geography editor for The New York Times, was watching the scenery pass by when he noticed a grain elevator and a few houses. They were surrounded by fields of green as far as he could see.
